I like the cinematic aspect ratios. #2 is my favorite.

Are they stitched from vertical shots?

no, all are stiched from vertical rows of frames.

...all from 2 rows, except #6, is 4 rows of 8 shots: 32 though.

Yes, #6 has also nice even lightning, which is not common for evening panoramas from large mountain scenes.
