These lenses require 'flanged' adapters as there is no other way to 'stop' them down on our digital cameras.
Some more recent M42 lenses like the late takumars have an additional metal guide that moves alongside the rim of the rear element when you turn the aperture ring to allow for auto-exposure/in-camera metering. This aperture guide is directly linked to the aperture ring and is clamped by the flange on the m42 adapter which is why you feel that the ring becomes stuck.
