One night we went to a new fish restaurant, and eat and watch fish cooked?!
It is not a regular eatery but not too expensive, though located just a middle
of very fashionable place called "Roppongi". Mostly shot with new CZ Distagon 2/28 ZF + D700 (Jpeg output).

Entrace

We can watch entire Kitchen and fellow eaters, this is a trend in this business.

First, sea urchin on top some processed plant/vegetable

Tofu and fish meat clear soup

Sashimi on ice

Grilled fish meat

Noodle

Tempura

Bamboo shoot rice with miso soup and some pickles

Desert (strawberry on jelloed grapefruit)


That is all, while we are eating someone ordered "FUGU" (pufferfish) dish
so we watched a female chef cut this fish in pieces. This fish is famous
due to a tetrodotoxin poison.
Starting to kill a live fish (Distagon 2/28 ZF)

Ending (by Summicron-R 50/2), fish is very boney

Yes, many times. The problem is expensive for "fugu" dish. Very Happy
This kind of restauraunt charges minimum US$120 per head. Surprised

(By the way, we paid US$80 for our dish. Alcohol is not included.
The lens is bought new in Tokyo, the other one will show up soon.)

Pretty expensive every dish in Japan Wink Is taste is so fine or people eat for challenge ?

Taste of fugu fish as sashimi is not too great as some people say, but
"fugu" dish consists of three or four dishes, one sashimi, second deep fried
meat with bone, and soup with fugu meat. Later this soup is mixed with
steamed hot rice, this last one is the most tasteful dish, though at this
point many people are already full unfortunately. Very Happy

No challenge of course, that female chef in the photo must have a certificate from
the government institution for this particular fish called "fugu", which is
extremely toxic to nerve cell. You have to know how to handle this fish.

Fugu is not on the top of my list of dishes to try. Thanks for this series koji. No-one, but no-one (not even the Thais) can present dishes with the subtlety and grace that the Japanese achieve

I agree with Patrick about the presentation of the food. Fascinating.
Thanks Koji for taking us into a Japanese Restaurant. What a beautiful series! So, no secrets for cooks there, eh? Smile

Regarding strange food, I once saw a sheep brain being eated inside a sheep skull, in Norway.
(by the way, with a few exceptions, I really like the Norwegian kitchen)

Excellent presentation Koji!!

I like the colors and the life atmosphere you catched so nicely!

Some people say that they like the tingling feeling in their lips and fingertips when the eat FUGU due to the very small remaining portions of that toxine....well , some need these kicks.
