In olden chinese way, things have four stages. Camera and lens used is Pana-GF1 + G20/1.7, yes AF used.
Sharpening knives needs rough(red), mid(yellowish), fine stones(white) and lots of practice...

1.Starting ... set everything in place

2.Continuation ... both wedge type is harder to sharpen

3.Change ... used stones are flattened by sanding each other

4.End/Conclusion ... lost some hair on my left hand (to check sharpness) top=before, bottom=after

I have been doing this since I was seven or eight years old, don't know why. Very Happy
Maybe I like sharp things. Laughing Laughing

Koji, we seem to be "related souls" since my grandpa teached
me exactly the same and I also like my knives razor sharp!
I even have the same one you have (the japanese one in pic #2)
- a full set actually. A friend once came to visit me, while I was
cooking (which I love doing) and he grabbed a knive and ran
his finger over the blade to "see if it is sharp" - well it was and
the evening ended in the emergency room to have it stitched;
quite a bit different than it was planned.... Wink

So, lesson learned? "Don't use sharp things unless you know how to
use it" Wink Wink

[ever shot a female portrait using a Makro Planar or Apo Makro
Lanthar? Then you know what I am talking about ... Wink ]

Yeah Klaus,

Almost the same thing happened in my house, I told one of our guests
our knife is just sharpened. But the guest cut one of her fingers, not
too serious though luckily. Since after this accident, we are not allow
for the guest to use our knives. Very Happy

My wife hates when I can find her mustache(?!) on my photos. Very Happy Very Happy

Newer PnS cameras have an option to beautify skin tones of faces, so does
newer RAW developer such as Capture one 5 Pro, which now sports
similar software feature. Alas, we are in 21st century better or worse.

So we all use the "Global" Knife Laughing

That Knife and my Sushi Knife are the only ones I need in the kitchen.
Best gift I have ever received. Very Happy

Koji, no santoku?

Global makes a very nice one, when this Lamsonsharp finally gives out,
I'll be getting one of those. The French set is Bargoin. I was taught how
to sharpen with whetstones like yours, but sad to say, just use a steel for these.
Need to see if Norton Abrasives still sell the ones I once had.

hee hee, welcome to the "global club" Wink Wink

There was a special a few days ago here on TV where a
german "blue blooded" had a knive maker do the "sharpest
knive on earth" which consisted of several hundred layers of
japanese Katana steel folded around a central layer of german
razor blade steel. That thing showed and amazing sharpness,
the blade was only a few microns thick and still worked like
new after several hundred cuts through 5" of sand paper blocks.

You would have liked that for Sushi Andy!!

Yeah that would be great. My sushi Knife was also a gift. I have no idea it's make nor does it matter.

Actually my Global is now 12 years in my hands.
It has never once seen a sharpening stone Shocked
Still sharp enough to easily slice tomatoes as thin as paper.
Pretty amazing for a mass produced blade.
