Yes, you have to pan, as these things are moving very fast indeed.

I also had to keep the lens wide open as the fastest possible shutter speed is required, even in bright light like this.

This makes focusing a critical guessing game, because essentially you have to pre-focus for the distance you anticipate. There is no way to use focusing aids as there is no time for focusing, and focus confirm of course is too inaccurate. I don't think the people with AF are much better off really.

With 360mm you have a relatively narrow DOF even if your target is 500m-1km away. A very small - a fraction of a degree - turn of the focus ring means a lot in sharpness. You can't just set the thing to infinity.

To prefocus, I marked ranges beforehand, on the lens barrel with tape. One mark was set for sharpness at Alcatraz island, which was about 2km from my spot, another at about 1km, and another at about 500m, set by verifying sharpness by test shots of boats at about the right distance. I selected the focus mark anticipating the general distance where the planes would be.
