Congrats. Very nice collection and all in very good condition as far as I can see.
Do you know why there are different colours/coatings ? Is it a question of glass/lens type or more a question of production date ?

Yes, they're all mint. I'm a nitpicker, which shouldn't come as a surprise to forum members who have been reading these pages for years Very Happy

AFAIK, it is about natural evolution of a product - the optical forumulae remained the same (or similar) while multi-coating was updated with new production methods. This however does not apply to all Ai-S lenses, there are some where the optical recipe benefits from use on full frame DSLR and others where the Ai version with slower focus throw and simpler optical formulae is more desirable to Nikkor aficionados.

These old Ai/Ai-S Nikkors really do paint nice detail and being simpler optical formulas (compared to AF) they often give a more natural look to images. As with any lens, you benefit from profiling the color reproduction with a color checker map. I have custom color profiles for all lenses, as some really require it, their color reproduction being a child of their age.
