I have a Schneider Xenotar MF 80/2.8 for the Exakta 66 with some mild internal fungus. I have some lens cleaning experience but this one is too precious to attempt myself. This is a modern lens (1990's) but I still worry about damaging internal coatings. I want to have this serviced one time by someone who is meticulous and cautious. Can anyone recommend a good technician/shop? North America preferred. Would be interesting to learn of a good shop in Europe too.

I don't know about most trusted but Mike Eckman put together a worldwide list of repair shops. I would gather a few you are interested in, look at reviews, and contact them to get a feel for the place and if they can work on that lens.
