That is the trick if I can say so. The eye will learn , with time, to see depper and deeper.
Regarding Junku's work : Wonderful ! 
And remember that he used on the majority of these a 50mm fixed focal lenght lens (Leica on a Leica, of course  ) and same film; Fuji Neopan 1600 .
Maybe outdoors he also used those darkening filters because the high film's sensitivity. But that's just a supposition.
PS. Almost same style (high contrast) with lights and shadows is used for B&W work by Trent Parke http://www.in-public.com/TrentParke/gallery/66 which I also like.
