I'm looking at a Vivitar Close focus 28mm / F2.8 that has a Konica AR mount. Or even a Konica Hexanon AR 28/3.5 ( I think both are the same mount)

What are my options for adapters to a EOS-M?

No, as long as the adapter doesn't contain a glass element (and adapters for mirrorless systems usually don't) there's no possibility that it affects quality.
I have some adapters for my nex from the same company, and all work fine.

I Don't know how adapters for eos M usually are, but it seems what you are looking for from the description, yes.
