What's the best way to use M42 lenses on an E-1, Atilla? Is there any adapter you would particularly recommend or are the adapters all the same? Also, does the Olympus have the same problem with not being able to focus to infinity like the Nikons do?

You can use with any kind of adapter what is available on market and no problem with infinity at all. Easy to make right adapter to 4/3 system, because register difference between two system is big.
